Here in the Upper Valley region of central VT and NH, on days like today we get cold and snow, sleet, and winter rain, slush and such…but we love our food! Cooking something fun and special adds some real spice to life — especially during these COVID-19 quarantine weekends. Here’s a quick meal you can put together in about 30-40 minutes from start to finish and leave the dinner table with everyone licking their lips wishing for more.
Start with sweet potato slices dipped in egg and pan fried with salt/pepper.
Then pan cook black beans/onions/garlic with cumin/black pepper and olive oil.
Pan fry boneless pork chops marinated in lime juice and cumin with salt and Vulcan fire salt - topped with goat cheese — finished with paprika and lime juice.
Egg pan fried very easy over with salt/turmeric as side.
Spinach cooked late with beans/onions/garlic/olive oil.
Arrange potatoe slices around plate edge. Fill center with bean/rice/spinach mix. Top with chop. Add egg, very easy over, on side. Add wilted spinach on side. Grated Parmesan to final finish. Salt/pepper to taste. (Can use sliced plantains instead of sweet potatoes if you can find them!)
I like using cast iron pans to cook everything. Always use a bit of olive oil to keep things sizzling, and a hot pan before you start. Don’t overcook the pork chops.
